Care & Use

A professional result at home, thanks to our innovative refractory ceramic.

HR® Oven Ceramic

Emile Henry’s HR (high resistant) oven ceramic is thermal shock and chip resistant.

COOKING

Food cooked in clay dishes takes longer to heat than food cooked in metal; due to differences in heat diffusion- usually around 10 minutes longer. Once on the table, your dish will retain its heat to keep food warmer for a longer period of time.

Although the glaze is resistant to sticking, it is recommended to lightly grease your dish as each recipe varies in the amount of fat used. This helps to ensure that your baked goods will effortlessly lift off each time.

Emile Henry HR Oven Ceramic is designed to resist oven temperatures up to 270⁰C.

GRILL

Emile Henry dishes can go under the grill. It is recommend that the dish is at least 3/4 full.

MICROWAVE OVEN

All Emile Henry dishes can be used in the microwave oven. While cooking, the food inside can heat the dish as much as 50⁰C. It is advisable to use an oven mitt to take your dish out of the oven.

FREEZER TO OVEN

Emile Henry dishes can be taken directly from the freezer to a heated oven. This is wonderful for reheating frozen left-over’s.

PRECAUTIONS

  • Do not use directly over open flames or on the hob.
  • Avoid placing your hot dish on a cold or wet surface.
  • Allow your dish to reach room temperature before freezing.

FLAME® CERAMIC

Emile Henry Flame® can be used in the oven, microwave, grill and on the hob – gas, electric, induction (with an induction plate) and halogen heat sources.

Flame® Seasoning

Season Before Use – (excluding the Pizza Stone & Grill Stone)

To season a new dish, we recommend adding about 1 inch of milk to cover the bottom of the dish. Let the milk simmer for five minutes. Remove the dish from the heat and allow it to cool before cleaning. You can also simmer one quart of water with 1/2 cup of rice for five minutes instead of milk.

Cooking

Preheat on low heat for 10-15 minutes. Never heat an empty dish on the stove – add a little bit of oil or liquid.

Other useful information

  • The ‘foot’ on the bottom of Flame cocottes, tagines, and fondues spreads heat and allows for even cooking.
  • Bumps on the inside of the stew pot lid catch condensation created by the steam inside of the cocotte. The steam then falls back into the pot, preventing food from drying out and keeping flavours sealed inside.

‘Crackle’ in the glaze

Each piece will begin to develop its own character as it expands and contracts on the hob. Proof of the product’s heat resistance and longevity, this natural occurrence will appear as unique markings in the glaze known as ‘crackle’. The crackle does not affect the functionality or life of the product at all. We stand by the quality of our products with a 10-year warranty against any manufacturing faults or defects.

BBQ® CERAMIC
